Many people eat ramen every day. Did you know that about 95 billion packs of ramen are eaten every year? That’s about 13 times more than the world’s population! Today, we will be learning how to make ramen. Once you finish reading, you will already be good at cooking ramen.
First, for the miso ramen soup, you will need 2 cloves of garlic, 1 knob of ginger, 1 shallot, 1 tbsp toasted white sesame seeds, 1 tbsp of sesame oil, 1/4 lb ground pork. You will also need 1 tsp of Doubanjang, 3 tbsp of miso, 1 tbsp of sugar, 1 tbsp of sake, 4 cups of chicken stock, 1 tsp kosher/sea salt, and 1/4 tsp of white pepper powder. For the noodles, you will need 2 servings of ramen noodles. Optional items are ramen eggs, corn kernels, seaweed, green onions, clash, shiraga negi.
For your soup, first mince the garlic, ginger, and shallot. Then add the paste (La doubanjang) or (Doubanjang) and add miso. Quickly blend well with the meat before they get burnt. Then, add sake and chicken stock and bring it to a simmer. Taste your soup to decide how much salt is necessary. After, cover with the lid and keep the ramen soup simmered while you cook the noodles. For the noodles, you first have to bring a large pot of unsalted water to a boil. When water is boiling, take some hot water into serving bowls to warm up the bowls. (Drain before adding cooked noodles). Loosen up the noodles. Then, cook the noodles according to the package instruction. After, when the noodles are done, quickly pick them up with a mesh sieve. You don’t want to dilute your soup, so make sure to drain the water well. Put your noodles in the bowl. Finally, add the ramen soup with some other toppings.
